Il Novello is the organic olive oil from the first harvest in San Mauro Pascoli, which occurs on the day when the olives change from green to violet, at the end of October.
The oil is extracted from Correggiolo — the Etruscan olive that is found naturally on the hills between San Marino and Rimini. The olives are picked by hand and pressed in a stone press within 24 hours after harvest. To get 1 liter of oil, about 4500 olives are required.
The taste is grassy and has a distinct taste of fresh artichokes and peppery aftertaste. If you appreciate olive oil, this is a must to taste! In addition, a new harvest is launched each year.
The areas of use are many. Some examples are drizzling over a salad, pasta, meat, or lightly cooked vegetables, such as broccoli, chard, asparagus, and fennel. Also, try drizzling the oil over vanilla ice cream for an exciting and lovely flavor combination.
Always place on the table before dinner to dip a good loaf of bread in.
